It’s hard to find. It’s never on the road. When driving south on the M6 highway from Budapest, towards the Croatian border, our oenological destination is usually Villány, famous for its red wines. Meanwhile, along the way, about 1.5 hours after departing from the capital, on the right side you can see a distinctive strip of green hills stretching for about 30 km. They’re easy to miss in the landscape. However, if you slow down and leave the highway, you’ll find yourself in the very heart of a very important wine region.

Is this Hungary or Germany?

Someone might ask, looking at the names of the most important wine producers from Szekszárd. Heimann, Takler, Eszterbauer, Sebestyén, Schieber, Bodri, Lajver… To answer this question, we need to delve into history. We know that viticulture in Pannonia dates back to the 3rd–4th centuries AD, when the Romans planted vineyards here. After the fall of the Roman Empire, winemaking traditions were adopted and continued in the Middle Ages by monks and local peasants. From the 11th century, vineyards were mainly managed by monasteries and churches. In 1061, the abbey in Pécsvárad was founded, which played an important role in the development of winemaking in the region. Wine from Szekszárd began to gain a reputation as a high-quality product.

Then the Turks arrived and took over these beautiful lands for 145 years. During their occupation, many vineyards were destroyed, and cultivation survived only in less accessible areas. When the war ended in 1686, Szekszárd was devastated and depopulated. The new rulers – the Habsburgs, although not always sympathetic to Hungarian aspirations for independence – provided the region with political and economic stability that fostered the development of agriculture and crafts. They encouraged the region’s repopulation by bringing settlers from Germany, primarily Swabians – who, after settling in their new homeland, became known as Danubians (Donauschwaben) and possessed knowledge of agriculture and winemaking. Where did they come from? Mainly from southern Germany, Austria, and also from present-day Alsace and Switzerland. They settled in many regions of the Pannonian Basin, with Szekszárd being one of the most important.

What did they contribute to local winemaking? Primarily, they planted new vineyards on hillsides, restoring abandoned and uncultivated vineyards. They introduced a systematic approach to cultivation (organized rows) and soil care, careful and systematic pruning, and began aging wines in oak barrels, which improved their quality.

Gradually, an entire infrastructure was established, with settlers building wine cellars, many of which, carved into the stone hills of Szekszárd, survive to this day. They established winemakers’ communities and guilds, which helped regulate the quality and integrity of production. Without a doubt, the Habsburg era was a period of renaissance for Szekszárd – thanks to post-war reconstruction, the influx of new residents, and investments in quality, the region gained a lasting position as one of the main centers of red wine production in Hungary. The Germans not only rebuilt winemaking here – they redefined it, giving it a shape, quality, and reputation that have endured to this day.

Warm, getting warmer…

The climate is getting warmer year by year, but for us Poles, a summer visit to Hungary still evokes associations with the Mediterranean. The further south we go, the more pronounced these associations become. When we stand in the main square of Szekszárd, we’ll see fig trees, olive trees, and oleanders, as if we were already in nearby Croatia or Italy. At the intersection of these two geographical worlds, a unique climate has developed, further nuanced by the diverse topography.

Moderately warm and moderately dry, with annual sunshine of around 2,050 hours, providing ideal conditions for growing grapes, especially red wines. Szekszárd, along with Villány, is among the warmest wine regions in Hungary. Closed valleys protect it from cold winds and Sleepy frosts. The local climatic conditions are also significantly influenced by the proximity of the Danube, which enhances the effect of solar radiation. The hills are 150–250 m above sea level, with slopes facing south (these vineyards are warmer) or north (cooler). Hot summers and relatively long, warm autumns allow the grapes to ripen slowly and evenly. Szekszárd lies on rolling hills, whose soils are a mixture of loess, silt, clay, and sand, often with a high limestone content. This diversity of soils gives the wines complexity, finesse, and elegant structure. In the region’s best vineyards – for example, in Görögszó, Strázsahegy, and Gurovica – red clay is also common, allowing the soil to perfectly manage heat and water. Experienced winemakers know that when the vine roots reach red soil after a few years, the leaves become greener, the plant grows more vigorously, and copes better with drought – this allows for the production of must with a very high extract.

German settlers who developed the devastated region brought with them varieties they knew well from their homeland. The most important of these was Blaufränkisch, known today in Hungary as Kékfrankos. This, arguably the most important red grape variety in Central and Eastern Europe, perfectly reflects the region’s terroir: it produces fruity, spicy, dry wines with a distinct acidity. The cropping structure is decidedly It is the leader, growing on almost 700 hectares. Absolutely all producers cultivate it, treating it as a material for single-varietal wine and/or as a base for bikavér. Bikavér?! But how can that be? After all, bikavér is primarily associated with Eger… But it is. It turns out that the idea for it was born in Szekszárd. The name bikavér (bull’s blood) is attributed to János Garay, who in his poem “Szegszárdi bordal” (Szekszárd Wines) from 1846 described the color of red wines from this region as “bull’s blood.” Only later did winemakers from Eger borrow the idea for this blend, and the rest (i.e., the legend of bull’s blood drunk by the heroic defenders of Eger Castle) is history. Over time, Szekszárdi Bikavér has undergone many changes, and today the region offers two versions of this iconic red wine: Bikavér and Premium Bikavér. According to regulations, in both cases, the wine must mature in wooden barrels for at least one year. After this time, Bikavér can be released on the market, while Premium Bikavér cannot be sold before December 31st of the year following the grape harvest. Both types must be a blend of at least Four grape varieties are used, with Kékfrankos accounting for at least 45% of the wine and Kadarka accounting for at least 5%. Other permitted grape varieties include Cabernet Sauvignon, Cabernet Franc, and Merlot. Winemakers are permitted to supplement the blend with various varieties (e.g., Blauburger, Menoire, Pinot Noir, Syrah, Malbec, Sagrantino, Tannat), but combined, they can only account for 10%. What are the organoleptic characteristics of both varieties? Bikavér displays dark garnet and ruby shades in the glass. On the nose, we find ripe black fruit and notes of barrel aging. The wine is characterized by a distinct yet balanced acidity and an elegant, mature palate. Premium Bikavér has a deep garnet color, a complex and multi-layered aroma, and a full body with a strong structure and a wealth of flavors. The wine is not dominated by tannins, it has a velvety texture and elegance. The second largest variety in terms of area planted is Merlot, followed by Zweigelt, and then almost equal areas are occupied by Cabernet Franc (which produces exceptional wines in neighboring Villány) and Cabernet Sauvignon. However, particularly important – both for the region and for Hungary in general – is Kadarka, which – although it is found in Szekszárd only on Approximately 80 hectares – it is considered one of the region’s characteristic varieties and was grown here even before the Donauschwaben arrived. It fits perfectly with the local terroir, and its unique spiciness, elegant acidity, and light tannin structure produce excellent results in both single-varietal wines and blends. The return of Kadarka is one of the region’s successes in recent years. Of course, if someone wants to drink white wine from Szekszárd, they will find it too. Most winemakers produce Olaszrizling, Sauvignon Blanc, Királyleányka, Grüner Vetliner, or Chardonnay, but it is the red wines that truly define the region.

As throughout Hungary, in Szekszárd, too, the magical knowledge of winemaking has been passed down from generation to generation in many winemaking families. Moreover, some of the best wineries here cherish the memory of their German roots. The Heimanns are a perfect example of the wonderful results that can be achieved by focusing a family around work on a wine estate. They arrived in Szekszárd in 1758. They ran a farm typical of the time – combining viticulture with animal husbandry and agriculture – and this continued until the second half of the 20th century. After the fall of communism, in 1991, Zoltán Heimann senior transformed the farm into a classic winery – one of the first after the fall of communism. Together with his wife Agnes (an economist), they started everything from scratch: they purchased new They acquired plots of land, built cellars, and switched cultivation from quantity to quality. And suddenly, wonderful wines began to emerge! Interestingly, the flagship, the cuvée Barbara, came from Agnes’s hands.

The Heimanns successfully instilled a love of oenology in their son, Zoltán Jr. The ambitious young man was sent to Montpellier and Udine for training, and practiced in Australia, Germany, and Italy. When he returned home, he asked his father: “Dad, what should I do to be successful?” Zoltán Sr. replied: “Son, create the best Kadarka and Kékfrankos in Hungary.”

This is how the Heimann & Fiai project was born, focusing on these two grape varieties, but moving toward ecology, minimal intervention, and spontaneous fermentation. Zoltán junior has already earned the nickname “Kadarka Man,” known not only in Hungary, and is becoming a star overnight. Always smiling, modest, and open, he is a true symbol of this extraordinary region. And compare them with the joyful, pulsating Kadarkas, Kékfrankos, and Bikavérs from the young Zoli. Both are delightful. In 2023, Zoltán Heimann senior was awarded the title of Winemaker of the Year in Hungary. He is an icon of Szekszárd, actively involved in regional wine associations and building local ties, and is a great community activist.

Also after the Hungarian transformation, another very famous Szekszárd winery was established – Takler Pince. A major player (approximately one million bottles annually), the company is still family-owned, run by Ferenc Takler and his two sons, András and Ferenc Jr. From the very beginning, they focused on quality and elegant style. Of course, they specialize in red wines, especially from varieties such as Kékfrankos, Merlot, Cabernet Franc, and Cabernet Sauvignon. Next to their vineyard, they built a chic and comfortable guesthouse and the excellent Primarius restaurant, named after one of their most famous wines. The cuisine is a subtle reinterpretation of Hungarian culinary tradition. The menu is seasonal, and each dish features a specific wine from the Takler vineyard. So if you go to Szekszárd this autumn, you’ll be able to try, for example, grilled carp fillet with potatoes, cottage cheese, smoked paprika cream, and fish cracklings (recommended wine: Örökség Kadarka), pork medallions with lemon and sage, served with potato wedges, romaine lettuce, and ajvar (recommended wine: Szenta-hegyi Kékfrankos), or finally, mouflon goulash with dried plums and red wine, served with potato dumplings with bacon and sour cream (and Szenta-hegyi Cabernet Franc). Admit it, are you hungry?

Of course, you must try the exceptional wines, such as Gurovica Kékfrankos or Örökség Bikavér (örökség means heritage, and this word well reflects the respect the Takler brothers have for the Hungarian winemaking tradition).

There are many more examples of family businesses in the industry, including the small but highly regarded 9 Sebestyén Pince, run by Csaba and Csilla Sebestyén, who farm 17 hectares, primarily growing Kékfrankos, Kadarka, Merlot, and Cabernet Franc. Their style reflects current trends – these wines tend to be lighter, more delicate, fruity, and don’t require a special setting like beef tenderloin steak.

Winemaking in Szekszárd is flourishing; in addition to long-established producers, new ones are emerging, sensing the region’s potential. A good example is 10 Szeleshát, or Windy Hill. This project was launched in 2001 thanks to the dynamic László Krajcsovszky. He reclaimed a derelict plot of land in the southern part of the region, planting it with vines. Merlot reigns supreme here (especially in the Gubac plot), and in the cellar is winemaker Krisztina Rosta – be sure to meet her if you want to meet someone with a true passion for winemaking, a passion that yields excellent results.

Taste the flavours of Szekszárd

Certainly, the man in the cover photo does not taste Szeleshát wines in the proper way… Even if two wines are made of the same grape, from the same vintage, by the same team, there can be differences, and it is an adventure to discover them. A great price-value wine and a single vineyard beauty: these are K2 and Kerek 2022, two Kékfrankos wines by Szeleshát Wine Estate in Szekszárd wine region.

K2, 2022 (Kékfrankos Estate Selection)

The variety is called Kékfrankos, and known in the neighbouring Austria as Blaufränkisch (meaning the same “Blue Frank”), and it is the most important indigenous grape in Szekszárd. At Szeleshát two varietal Kékfrankos wines are made, the entry level one is called K2. After careful selection the fruit is fermented in stainless steel tank, and half of it is aged in oak for 6 months. The wine is bottled in the so called Szekszárd bottle, which is allowed only for wines approved after rigorously tasted and evaluated by the regional board of experts.
It costs only 1990 HUF (5.10 EUR) on the webshop of the winery.

GROW Discover GROW – master of disguise

with Igor Lukovic & Oliver Coleman
Date and time: 9 June, 2.00 pm – 3.30 pm

The great Central European white grape you’ve probably never heard of hides its light behind disguises. Whether Graševina, Grašac, Olaszrizling, Welschriesling, Laški Rizling, Ryzlink Vlassky, this grape is one of the most important across the whole region. It’s incredibly versatile, making everything from sparkling, to light or full bodied complex dry whites and even amazing sweet wines. Discover how it has transformed from a workhorse grape to one creating waves of excitement with Igor Luković, co-founder of the GROW du Monde competition.

Igor Luković is a wine critic, writer, journalist and a certified sommelier from Serbia, who has worked in the wine business since 2003. He is editor in chief at “Vino & Fino” magazine and associate of many other wine media. He is one of the founders of the Wine Identity initiative, which manages wine events in Serbia and the surrounding countries. For many years, he has been President of the Sommelier Association of Vojvodina and CEO of the Serbian Sommelier Association.

Taste Szeleshát wines in London on 9 June!

Szekszárd winemaker Krisztina Rosta was chosen The Most Successful Young Winemaker at VinAgora international wine contest in 2021. She goes on making stunning wines, this Olaszrizling is a great example. Spring in the bottle!
Szeleshát is one of the nearly 70 exhibitors at The Ultimate CEE Wine Fair in London.

Confusing name, enchanting wines

Olaszrizling is the most planted quality white grape in Hungary, a versatile, great grape variety, our only problem is its name. Olasz means Italian, and rizling is Riesling, but it is neither Italian, nor Riesling (though according to some recent researches it might be Italian originally. More likely people used to call it Italian, because in the old days Italian was a synonym of high quality. Sue Tolson Hungary based English wine writer wrote a detailed article about Olaszrizling.

Noble beauty from Szekszárd wine region

“Nemes Rizling” is one of the synonyms of Olaszrizling, and there has been an initiative recently to change the Olaszrizling to Nemes Rizling again. (‘Nemes’ means ‘noble.) The initiative failed, so the variety is still called Olaszrizling.

Szeleshát is a single vineyard, situated in a wind tunnel (hence the name: ‘Szeleshát’, meaning ‘windy ridge), has a submediterranean climate and loess soil that are both very important factor for red wine making. This area was replanted by our family from 2001 till 2017 on 55 hectares. The mostly grown varieties are Kékfrankos, Merlot and Cabernet Franc.

“Fresh, vivid wine with a very pleasant floral smell. Nice vibrant acidity keep this fruity wine enjoyable for a long time. The mostly loess soil at Szeleshát vineyard makes this experience unique.”

DOWNLOAD THE RECIPE BOOK HERE

This little collection of 12 recipes is not a serious cook book and it does not want to be one. Some of the recipes are not described in details with the accurate amount of the ingredients, since this is how I received them from the winemakers. But they have the extra value, that winemakers shared their own favourites, plates they often cook, and they are sure about the wine pair as well, since they have had many opportunities to try. We hope you will enjoy booth cooking and eating these dishes, plus you may try them with the recommended wines.

I like wine and despite some celebrity doctors with the No Alcohol-mantra, I drink wine with all my dinners. I also like using wine while I am cooking, the exciting taste of a good wine gives an extra touch to most meals. Let me share a simple recipe myself, from yesterday. We had some leftover pan-seared chicken liver from the day before, so I fried them in a little butter, added some rosemary and thyme (but you can use other green herbs to your liking), and I added just a dash of sweet Tokaj wine. With a hand mixer I made a smooth paté and, in five minutes the leftover, boring chicken liver was upgraded into a delicacy, my kids liked it a lot! It is a Christmas recipe, in a sense that it takes minutes to make, and it lets you enjoy the festive season without stress, as it is meant to be.

Have a peaceful Christmas!

Importer of the Week: Ewa Hangel, Kociolek i Wino

By Ágnes Németh
It all started with selling cauldrons – the dishes to cook goulash on open fire –, and now Kociolek i Wino sells around 5–6000 bottles of wine a year, about 200 labels along with quality food products and warm dishes. The person behind is Ewa, an always smiling, hard-working, amazing woman. I had the chance to visit the shop and bistro personally on Friday, so this year’s Christmas has started for me on that day.

Some of the labels so far: Barta Winery (Tokaj), Béres Vineyards (Tokaj), Dereszla Winery (Tokaj), Fehérvári Wine Estate (Somló), Szeleshát (Szekszárd), Teleki Wines (Csányi) (Villány), Thummerer Winery (Eger), Tornai Winery (Somló), Tóth Ferenc Winery (Eger), Vesztergombi Cellar (Szekszárd), Zsirai Winery (Tokaj, Somló, Villány)

The “Cauldron Lady” feeding the neighbourhood

Once upon a time there was a woman happily married, and since her husband was half Hungarian, they decided to sell cauldrons in Poland, just to maintain some relation with the husbands’ father’s home country. The Polish people also like cooking on open fire, but they mostly use a grill, so cauldron was something exciting for them. Ewa must have a natural born marketing talent: she wrote a book of cauldron recipes to boost the sales of the pot. But then the customers started to demand ingredients, spices – just to prepare Hungarian stew and goulash perfectly. Why not?

So, she launched a tiny shop in the outskirts of Warsaw. It did not go well, so Ewa needed her marketing instinct to work again: she started to organize picnics for the neighbouring families. They loved the delicious (and free) food, so the thing became a tradition, more and more people came, they also brought food themselves, so the “community building side effect” was also considerable. And these people did not leave without buying something in the shop. What is more, they wanted more. “I don’t want to wait a month to eat your fabulous goulash, I want to have the opportunity to eat it every day!” – claimed one of the customers. Ewa agreed, of course, so seven years ago a slightly larger shop became available in the same building, this is where she opened the shop and a little covered garden with some tables. And soon I met Ewa for the first time…

How many bottles do I sell? Well…

I first met Ewa when Borjour Magnum wine event organized a buyers’ programme, and I was in charge of the people to invite. After the expo we took the guests to Tokaj, during the trip we could talk. As Ewa explained, she had discovered so many stunning wines during that trip, earlier she dealt only with some mediocre wines, so it was a real eye opener journey for her. Funny enough, we visited Zsirai Winery back then, we had a late night tasting and we also stayed in the guest house – and now, after five or six years Ewa ordered a whole range of Zsirai wines from all the three wine regions where they have vineyards, the shop is full of Zsirai wines!
– So how many bottles do you sell?
– Well, I have no idea. I know that I have 6000 bottles in the store.
– So how many do you sell a day?
– I have never counted… About fifteen. Let’s count.
So, she brought a calculator, multiplied the daily amount by seven (since the shop is open every day), and with 52 (weeks), which is 5460. This little dialogue illustrates where her focus is. The objective is definitely not the financial success, not to earn more, but to serve the clients well, to make all the customers happy and satisfied.
– There is no space here at all, yet she keeps ordering new products… – say Giorgio, Ewas’s partner. And indeed, the shop is full of Christmas candies, wines, salamis, boxes of different sizes – it would be a challenge to place a pen in the crowded shelves…

What sells the best

Kociolek i Wino customers like international varieties, but they are seeking adventures, new things, therefore they love wines made of indigenous grapes. Kékfrankos, Irsai Olivér, Furmint – really big hits.
– How about Juhfark?
– I had Tornai and Fehérvári, but they are already sold out! Now I have Zsirai and I will order again from Fehérvári and Tornai in spring.
– And what about Hungarian bubblies?
– Well, Polish people are crazy about Prosecco, and not so much crazy about Hungarian sparklings. Though Tokaj method traditional sells quite well.
– What do they buy now, in the Christmas season?
– Mostly full-bodied red wines, but Tokaj is also popular, both dry and sweet. Hárslevelű and Sárgamuskotály are real favourites! And they also buy noble Tokaji wines, Szamorodni, Aszú (including 6 puttonyos) and Esszencia as well.

Helping the helpers

Ewa has a great relationship with the Hungarian Embassy in Warsaw. On the day when I was visiting the shop, two guys came from the embassy to fetch some boxes. Ewa sold them several cases of wines – Thummerer, Tornai, Vesztergombi and more –, but without any margin, because it is for charity. The ambassadors’ wives sell products of their nations, and the profit all goes to some sort of charity organizations. The person in charge at the embassy is really happy to have Ewa and her shop – they can source everything at one place.

Christmasy feeling

It is hard to finish a sentence, customers keep coming. Natalia, a colleague (Ewa’s “Right hand”) is behind a counter, but Ewa greets almost all the customers, some of them are old friends, she chats with them, then another client comes in. It looks busy, but Ewa explains that weekends are much busier, about 200 people have lunch at their place. Later we sit in the new restaurant room, it had been finished three months before, the brick wall was built with their own hands. Giorgio helps Ewa with everything, he is also the “lepeny master”. Lepeny is a pizza-like dish, but Giorgio makes a “fusion lepeny”: Swiss dough, Italian olive and ricotta, Hungarian sausages and salamis, there must be something from Poland as well, at least the electricity… Ewa’s daughter also takes her part of the business, Hungarian winemakers could meet her as well, Magdalena was in Budapest with Ewa and Natalia at Winelovers Wine Awards this year. Mother and daughter, loving partners, lifelong friends – this is the personnel of Kociolek i Wino – no wonder that love is all around.

Sparkling and still wine festival

Vienna has Grinzing, Paris has some vineyards in the Montmartre and Budapest is also a capital that boasts vineyards and wine cellars “within the city walls”. Budafok is the sparkling district of the Hungarian capital with iconic sparkling cellars like Törley, Garamvári and Sauska. The 34th annual Budafok Wine and Sparkling Wine Festival is an open air festivity with guest wineries – for example Steigler from Sopron and Szeleshát from Szekszárd – , live music and children programmes.

Date and time: 6th, 7th and 8th of September, every day from 16.00 to 23.00
Programmes:
– open air wine tastings at Oroszlános Udvar and Városháza square
– open air market of artisan products
– concerts, children programmes
– gastronomic exhibitors
Entrance is free, but the festival glass has to be bought for 2000 HUF.
How to get there: very simple, just take No47 tram from Deák square, ride 20 stops and you are in the centre of a buzzing wine village!
The official website of the festival is only in Hungarian and does not contain much…
The Facebook-page gives a bit more info.

Garamvári – pioneering and winning constantly

For a long time, sparkling wine production in Hungary was burdened by tax costs, and Garamvári was the only family winery producing sparkling wines, besides the big player Törley. Vencel Garamvári, the founder, a keen connoisseur of Champagne became successful with his traditional method sparkling wines made of Champagne varieties, but at the same time he was the first to make bottle fermented sparkling wine of Furmint grape. Blanc Fleur, the sparkling wine in our cover photos is an extra dry vintage (2018) sparkling wine made of Pinot Blanc, a real hit from the estate.
The estate produces still wines as well, and win many awards and titles all the time. The most recent one: Garamvári Sauvignon Blanc 2023 has been selected the Best White Wine of Savaria Historic Festival (one of the coolest events in Hungary!).

160 winery exhibitors, craft beers, artisan products, free jazz, rock and pop concerts, fireworks and parades. The stunning city of Szeged on the far east of Hungary boasts the probably the most significant open air wine event in Hungary. It is longer than the Budapest Wine Festival and it has more exhibitors than the 3-week-long Balatonfüred wine festival. The entrance is free, guests pay at the exhibitors for what they taste. It is the 28th edition, and since it is a really long wine fair of 11 days, even though it has already started, you can still participate! Take an Intercity train or drive (only 2 hours), enjoy the wine fair, and stay in one of the lovely hotels or guests houses of the historic and romantic city.

Date and time: 16–26 May 2024, the opening hours are quite flexible, just go there any time of the day…
