			<p>The <strong>iconic</strong> winery of <strong>Villány</strong> wine region has a few years’ experience of making fine chocolate to match their outstanding wines like <strong>Gere Kopar</strong> or <strong>Gere Solus.</strong> One of their recent creations, <strong>Gere-chocoMe Pecan Walnut Raffinée</strong> has just received an important acknowledgement! <span id="more-12542"></span></p>
<p><strong>Grand Taste</strong> is an international <strong>chocolate competition</strong> in <strong>Britain</strong>, where this year the jury tasted <strong>12.777</strong> samples. The process of evaluation is a <strong>blind tasting</strong>, just like with the wines. The experts evaluate aromas, flavours, texture and of course complexity. The highest prize is the <strong>3 star result,</strong> and this year <strong>only 205 products</strong> received this precious award.</p>
<p>One of the jury members wrote the following evaluation about it: <em>„This is one of the most interesting chocolates we tasted this year. We had to taste it again and again to experience how <strong>exceptional</strong> the scale of the aromas. This chocolate is top category. The <strong>grape seed</strong> extract gives a pleasant acidity, the salt and pepper give <strong>balance</strong> to it and all of these meets in the long, fresh aftertaste. <strong>Unusual</strong> and tasty.”<br />

			<p><strong>Katalin Tóth</strong> of <a href="https://tothferencpinceszet.hu/en/"><strong>Tóth Ferenc Winery</strong></a> in <strong>Eger</strong> has long been practicing the <strong>„alchemy”</strong> of pairing chocolate and wine, and she has a relatively easy job to do so: partially because the winery has a wide range of wines from the fresh, crispy whites to the aged, full bodied red wines, and on the other hand because she has two friends to help her create the sweet delicacies. <span id="more-10967"></span><strong>Viktória </strong><strong>Szeleczky-Takács</strong> is a chocolate maker at <a href="https://fabricchocolate.com"><strong>Fabric Chocolate</strong></a> family chocolate business and <strong>Adél Bernáth-Ulcz</strong> blogger <a href="https://csokilabor.blogspot.com"><strong>(CsokiLaBor)</strong></a>, the creative mind behind the pairing. <strong>Bikavérmousse</strong> is a brand new creation of the trio: chocolate ganache is made with butter and cream (without eggs), and then it is flavoured with <strong>Tóth Ferenc Egri Bikavér Superior 2017,</strong> and served on sponge cake made of cocoa bean flour. Egri Bikavér is the famous red blend of Eger (also known as Bull’s Blood, though nowadays it is rarely translated because the English term refers to low quality, mass produced style of the wine before the 1990s), and at Tóth Ferenc Winery the 2017 blend is made of <strong>Kékfrankos</strong>, Cabernet Franc, Cabernet Sauvignon, Kadarka, Pinot Noir and Merlot. <em>„Intense, rich and same taste on the palate as on the nose. The <strong>great acidity</strong> gives the real Eger character to the wine however the <strong>velvety tannins</strong> makes the wine pleasantly warm. Fruity taste complemented by slight bitterness of wild <strong>plum</strong>. A well structured wine with great potential and the promise of a long life.”<br />

			<p><strong>Katalin Tóth,</strong> manager and co-owner of Tóth Ferenc Winery was <strong>surprised</strong> to taste the typical notes of <strong>Leányka grape variety </strong>(’Leányka’ means ’Little girl’) in a 50-year-old bottle! Leányka is a white grape, delicate and slightly aromatic, usually freshly consumed wines are made of it. <span id="more-10681"></span>Tóth Ferenc Winery managed to create complex, <strong>layered</strong>, exciting Leányka (<a href="https://www.hungarianwines.eu/2018/09/24/top-4-mundus-vini-from-hungary/"><strong>Leányka Superior 2016</strong></a>, Mundus Vini, gold medal), but most cellars use Leányka for their Egri Csillag white blend. <em>„We have opened a bottle of 1969 and 1976 vintage Egri Leányka, and we were surprised to realize that these were sweet wines. But the most <strong>astonishing</strong> was that the same notes of a young Leányka were discovered in these old wines. Late harvest character, <strong>honey</strong>, raisin, <strong>mango</strong> – both wines are enjoyable and real rarities. The tasting of these wines initiated a thought that Leányka may have much <strong>longer ageing potential</strong> in our cellars than we had expected” </em>– says Katalin Tóth. The 1969 wine is an ideal Christmas present, especially for youngish, 50 year old ladies&#8230; <strong>1969 vintage</strong> costs 35.000 HUF (106 euros) and <strong>1976 vintage</strong> costs 30.000 HUF (91 euros), plus shipment.
