			<h3><strong>A big classic from a small mountain</strong></h3>
<p><strong>Kreinbacher Estate</strong> showed the world that Hungary’s smallest wine region, the <strong>volcanic</strong> <strong>Somló</strong> can produce méthod traditionelle sparkling wines of <strong>Champagne standard</strong>. The estate can boast with several trophies and Best in Hungary titles, in fact they are the most successful Hungarian winery of <a href="https://www.champagnesparklingwwc.co.uk"><strong>CSWWC</strong></a> (the Oscar of sparkling wines created by <strong>Tom Stevenson</strong>). <strong>Kreinbacher Classic Brut</strong> is made of 57% <strong>Furmint</strong>, 29% Chardonnay, 14% Pinot Blanc and is aged for a minimum of 18 months. <em>„White-fleshed fruits, biscuit and discrete flowers – enticing aromas line up in the nose. Besides the distinct fruitiness of Furmint, the most respected grape variety for sparkling wines, Chardonnay ensures great elegance. Refreshing <strong>grapefruit</strong>, lime and peach arrive first on the palate, the <strong>layered</strong> character is enhanced by <strong>brioche</strong>, nuts and some saltiness. The <strong>mousse is soft</strong> and enduring, the dosage ensures an ideal balance. Fine choice for each and every occasion.”<br />

<p><strong>’Kopár’,</strong> the iconic vineyard in Villány wine region is ’kopár’ indeed (the word ’kopár’ means ’bare’) on most places, but thanks God there are enough vines planted on these magic slopes as well. <strong>Csányi Winery</strong> has recently released its first <strong>Super Premium Villányi Franc</strong> (the highest classification of Cabernet Franc in Villány) from Kopár vineyard. <em>„Intense nose <strong>abundant</strong> with forest fruits and spices. <strong>Luscious</strong>, attractive palate with notes resulting from the roasting of the oak, <strong>blueberry</strong> and raspberry. 			<p><strong>Lajvér Estate, </strong>this state-of-art winery is situated in the picturesque valley of a little stream. Nature embraces the building with <strong>grass on the roof </strong>and large windows overlooking the gentle slopes. <span id="more-9715"></span>The estate awaits visitors with an <strong>80 seat bistro restaurant </strong>open from Thursday to Saturday (other days are also available with previous booking). <strong>24 August </strong>is the next date of their regular event called <strong>Lajvér Picnic</strong>, an ideal occasion to visit the estate, but the estate welcomes visitors all year long. It is highly recommended to taste their 2017 Rhine Riesling, which can boast the title of <strong>„The Best White Wine of Szekszárd” </strong>– the award was given at the latest Szekszárd wine competition. <strong><a href="https://lajverwine.com/termek/lajver-rajnai-rizling-2017/?fbclid=IwAR169I1gy_awHig9k3_FKsSy_GPRPaoaIJnkUf1q4v7J1IRd65whAHoDbZ0">Lajvér Rajnai Rizling 2017</a> </strong>was fermented in stainless steel and matured in oak for 4 months. As a side program she dined in <a href="https://babel-budapest.hu/en/"><strong>Babel</strong></a> restaurant, and she was <strong>amazed</strong>! The outcome is a recent one page long restaurant review in <a href="https://www.decanter.com"><strong>Decanter</strong></a> magazine <strong>August</strong> issue.

			<h4><strong>Contrast of textures</strong></h4>
<p>She started praising the interior and the main concept – <em>„The room is light, <strong>airy</strong> and contemporary – all Scandi-style furniture, glass and open brickwork. Some <strong>75% of the ingredients</strong> and furnishings, and all the wines come from <strong>Hungary</strong>”</em> – (in fact a couple of wines are from a broader territorry, from the Carpathian Basin, including Serbia, Slovakia, Austria), then she points out the suprising fact that most wines in the degustation menu are white, quoting the words of <strong>sommelier Péter Blazsovszky</strong>: <em>„Red wine is always the hero of the meal. <strong>White wines</strong> can show more facets and give you an enterily <strong>different perspective</strong> on the food.”</em> She is most fascinated by the textures: <em>„Apart from the original and cleverly judged <strong>juxtaposition of flavours</strong> on offer here, what was so striking was the contrasting textures. The signature dish of <strong>egg galuska (noodles</strong>) – a swoonworthy combitanition of spätzle topped with an airy cloud of <strong>truffle-infused foam</strong> – was followed, by way of refreshing contrast, by a <strong>silky</strong> but deeply savoury duck broth (which reminds you why consommé used to be considered such a delicacy), and then by a robustly <strong>smoky</strong> dish of <strong>octopus</strong>.”</em></p>

			<h4><strong>Juhfark shines through</strong></h4>
<p>Fiona Beckett mentions two white wines accompanying the dishes. A weighty <a href="https://www.hungarianwines.eu/grape-varieties-in-hungary/"><strong>Juhfark</strong></a> from <strong>Somló</strong> wine region (by Spiegelberg Winery) <em>„that was in no way diminished by the intensity of the food”</em> and a <a href="https://www.hungarianwines.eu/grape-varieties-in-hungary/"><strong>Hárslevelű</strong></a> from <strong>Mád</strong>, Tokaj wine region by Kaláka Winery – <em>„as a refreshing finale”. </em>And the judgement? <em>„I hesitate to award Babel a perfect score because nothing is ever perfect, but it’s hard to see what could be improved here.” </em>The result is <strong>9.5 points out of 10!</strong></p>

			<h4><strong>A different concept</strong></h4>
<p>Budapest has 4 Michelin star restaurants at the moment, and Babel is not among them, no one knows why. The restaurant is in a <strong>spectatcular square</strong> of Budapest, a few steps away from the river Danube. The <strong>staff</strong> is well <strong>trained</strong> and works smoothly, perfectly, and the food – well, Finoa Beckett’s words underline the efforts of the <strong>chefs</strong>, István <strong>Veres</strong> and Gábor <strong>Langer</strong> and of course the owner, Hubert <strong>Hlatky-Schlichter</strong>. If you check their website, you will be surprised by the main page: no images of elaborated plates or chairs and tables, just photos taken out in the <strong>nature</strong>, reflexing the <strong>purity</strong> of the ingredients and the philosophy.</p>

If you can arrange to come to Budapest, or you happen to stay here, <a href="https://www.robinsonrestaurant.hu/en">Robinson restaurant</a> near Heroes’ Square, in the green heart of the capital of Hungary is an ideal location. The building is on a tiny <strong>island</strong> built on a <strong>lovely pond</strong>, duck are swimming in idyllic peace. On the ground floor light French cuisinie, while on the first floor Dario Cecchini <strong>Tuscan</strong> master’s steaks cooked on charcoal, real <strong>„bisteccas fiorentinas”</strong> await guests. Celebrities like <strong>David Bowie,</strong> <strong>Sylvester Stallone, Arnold Swarzenegger</strong> have spent time here and enjoyed the atmosphere.</p>

</ul>
<p>Solus is undoubtedly the most famous Merlot in Hungary. Attila Gere made this selection of the best Merlot grapes long before the fellow winemakers. The smooth, long lasting, amazingly full bodied wine is unforgettable in itself, but can pair well with the Tuscan steaks.</p>
