Terroir, vineyard: Hajnóczy in Paloznak (marl, limestone), Gölye-mál in Alsóörs (permian red sandstone)

Protection of origin category: Balaton PGI

Technology: Careful hand harvesting, immediate processing followed by fermentation in low temperature, then 5-6 months maturation in stainless steel. The second fermentation took place in bottle (methode traditionelle) in spring 2021, followed by 30 months of bottle ageing on fine lees. Dégorgement took place a few weeks prior to the release.

Authentic Traditional Method Sparkling from Paloznak

 

This is the third vintage of the winery when traditional method bubbles were made, one white from Furmint and one rosé from Kékfrankos. The product line is more and more important, as the winery will open its own sparkling wine cellars in the following years. Furmint is largely used for traditional method s.wines in Hungary, because of its good acidity and neutral taste profile, mostly mineral character, depending on the terroir. Homola’s Furmint vineyards lie on Permian red sandstone and marga, the wine is fermented and aged in stainless steel for 5 months, followed by a long period of bottle ageing.
