Alberta loves Furmint and Kadarka!

Christina Masciangelo, the owner of Salivate Wine Consulting imports Zsirai (Tokaj) and Heimann (Szekszárd) wines to Alberta, Canada with success – so far she has ordered 36 pallets between the two wineries! Her interest for Hungarian wine was sparked by a friend, who had visited our Hungarian Gettogether event earlier, so we are part of this success story, and we are so happy about it! Read our interview with Christina.

More about Salivate Wine Consulting here

– How did you get close to the world of wines?
– I started working in restaurants when I was 19 years old, which is where my interest in wine was sparked. In 1994, I worked at my first wine shop, where my interest greatly increased. I subsequently worked at a few different wine shops, where I met the agents on the wholesale side, and immediately knew I had to work in wholesale, closer to the wineries and winemakers.

– What brought you to the Austrian wines?
– In the early 2000’s, my husband at the time, was travelling a lot to the US for work. I would ask him to go to wine shops and bring back a few wines to try. One trip he came home with a Grüner Veltliner and I was hooked! Around the same time, I was attending annual Society of Wine Educators conferences and attended some Austrian tastings with Terry Theise, a wine importer with Skurnik. I became obsessed with Austrian wine and Terry became one of my wine heroes.

– You have a nice selection of Austrian wines, so how did it occur to you to enrich your group of suppliers with Hungarian wineries?
– I started my wine import company in 2016 with six Austrian wineries, knowing I would diversify within a short time. I wanted to add unique wines to my portfolio that had a greater opportunity in the market. In 2018 I came across the Hungarian Gettogether wine event and was curious to learn more about Hungarian wines. It didn’t work out for me to attend that year, but the following year a friend of mine attended and raved about her experience. She connected me with Zsirai Winery, and we started communicating in late 2019. I placed my first order in 2020. Salivate was the first importer in North America for Zsirai!

– Before you were invited to the Hungarian Wine Summit, had you known anything about Hungarian wines?
– Prior to 2020, my Hungarian wine knowledge was basic. Thanks to Zsirai, I had the opportunity to visit Hungary in 2021, where I discovered the regions of Tokaj and Szekszárd. When I attended the Hungarian Wine Summit in 2025, my knowledge expanded significantly by learned about more grape varieties, more regions, and by tasting plenty of wines!

– What caught your attention at Heimann and Zsirai?
– I thought the quality of wines from Zsirai was fantastic. I tend to favour wineries that are small and family owned, as well as great value for the quality – so they fit that profile. When I was in Hungary in 2021, Máté from Zsirai introduced me to the Heimann family. I fell in love with their wines and the family and knew I had to add their wines as a compliment to what I already had from Zsirai.

– Have you already introduced these wines to your partners? What feedback did you get?
– By late 2020, the Zsirai wines had arrived in my market. Heimann wines followed in early 2022. Both wineries received very positive feedback! In 2021, during the pandemic, Salivate co-hosted a virtual consumer tasting as well as a virtual dinner with Máté from Zsirai. Consumers were very impressed with the wines!
The Heimann wines have also been well received, especially the Kadarka, as many consumers are choosing to drink lighter, fresher reds. In November of 2025 Zoltán (Zoli) Heimann Jr. came to the Alberta market, where we did a winemaker dinner and a trade and consumer tasting. One trade guest said to me following the tasting that it was the first Hungarian tasting he had every been to in 30 years of working in the industry! Just this past June, Máté Csanaky from Zsirai came to the market to do a trade tasting, as well as store and media visits. Again, everyone was impressed! Both Zsirai and Heimann wines are also in the province of Saskatchewan and are gaining greater awareness.

– Which wines sell the best?
– For Zsirai, the dry whites and late harvest Tokaj have been the most popular, followed by Olaszrizling from Somló. For Heimann, the Kadarka, Piros (Siller) and Kékfrankos are the best sellers.

– Do I understand correctly that you sell to wholesale and retail as well? Or due to the Canadian liquor boards, do you have to enter a tender to get to retail?
– I am the importer/wholesaler, so I sell directly to wine shops, restaurants, and hotels. In Alberta we have a more open system, so we do not have to wait for tenders. All retail shops are privately or publicly owned. As the agent, we can list whatever we want, and we are solely responsible for selling the products.

“Hungarian wines now have more of a presence in the Alberta market where I am based, as well as in Saskatchewan. So far, I have ordered a total of 36 pallets between the two wineries, so I think it’s going well!”

Congratulations, Christina, and thank you for being the ambassador of Hungarian wines in Alberta!

Galuschka Bistro & Garden

A new restaurant opened in the town of Tokaj in March, which is great news, as Tokaj wine region still isn’t considered an ideal destination for wine tourists when it comes to lodging and dining options. The new spot offers a nice Tokaj wine list, where the wines are grouped by village. A total of 19 wineries from the towns of Mád, Rátka, Tarcal, Erdőbénye, Sárospatak, Tokaj, Bodrogkeresztúr, and Tolcsva are featured on the list.

Since the opening in March, the eatery has received 169 reviews on google with an average of 4.9 points – so far so good. No wonder, the location is ideal: Galuschka is situated in the centre of Tokaj, in a charming garden, in a beautifully restored building from the 19th century. The website features mouth-watering, elaborated plates made of local and seasonal ingredients. “Our dishes feature seasonal and local ingredients, and the plates carry not only taste but also a story. The classics of Hungarian cuisine are reborn in a new approach, making the experience both familiar and exciting.”

The menu lists those traditional dishes as they are called, like potato cream soup, fish soup, smoked rainbow trout. Gergely Somogyi wine expert and owner of Tokaj Today appreciates the wording of the menu as well: “The menu features Hungarian classics, which are even called by their good old original names – a welcome step away from the habit of rechristening familiar dishes as something unrecognisable and the list-of-ingredients type of naming schemes that often plague menu cards in Hungary these days.”
The chef is Bence Várkonyi, with experiences from Michelin-starred and recommended restaurants (though these places are not listed, and with google we only found the restaurant of Andrássy Kúria, where Bence Várkonyi worked as chef before his recent position).
The restaurant offers three wine tastings, which is undoubtedly an idea to welcome. Wine travellers will have the chance to taste 6 wines from different wineries, to get a deeper insight of the region. Besides “Sweet Dreams” and “The Dry Side of Tokaj” the third tasting offers wines of Tokaj Oremus and its parent winery, the iconic Spanish Vega Sicilia. Also, a wide selection of wines is available from these two estates on the wine list, including four vintages of Unico.

From McDonalds to fine dining

We cannot avoid mentioning the owner, who is Sándor Scheer, the 16th richest person of Hungary (Forbes Hungary, 2025). In 2021 he was “only” the 30th richest one, but within four years his wealth grew 4 times bigger. Obviously, he was close to the previous, Orbán-led government, without that this fabulous growth would not have been possible. He also received 1.1 billion HUF for Galuschka, which is 60% of the whole cost of the establishment. One of the many business ventures belonging to Scheer is the company running all the McDonalds restaurants in Hungary. The 2024 profit was a record one: 8.8 billion HUF – yes, we spent more than ever on hamburgers that year. At least he created something really valuable with Galuschka, and let us hope that the restaurant will survive in real market circumstances as well.
Wine recommendation: Holdvölgy Vision 2021

Holdvölgy ‘meaning ‘Moon Valley’ is a state-of-the-art winery with outstanding, world standard wines. They are an exception in Tokaj naming all their wines with a concept instead of the usual Tokaji Furmint and alike. Vision is a dry blend from three classified, renowned vineyards: Holdvölgy, Nyulászó and Becsek. And why Vision? “Our Vision wine demonstrates that, in our view, a dry Furmint can be produced successfully and remain exciting every year if we blend it—in proportions that vary subtly and thoughtfully according to the characteristics of each vintage—with the pleasantness of Hárslevelű and the spiciness of Kabar.”
Holdvölgy offers award winning wine experience in the cellar labirinth under the ground. A must-do activity in Tokaj!
Wine recommendation: Zsirai Fordítás 2021

Zsirai Winery is owned by two sisters, Petra and Kata, they do a great job showing the young face of Tokaj along with the inherited traditions. ‘Fordítás’ is a barely known style of Tokaj, nowadays only a handful of winemakers make it. ‘Fordítás’ is made of the second maceration af the aszú berries. It has the structure and character of a 4 ‘puttonyos’ Tokaji Aszú. However, it is lighter than an Aszú. Besides the fruitiness it has firm acidity in perfect balance with the residual sugar. The wine is not available in many places, so it is a special opportunity to taste it.
The cover photo above features a single vineyard Hárslevelű from Középhegy vineyard by Zsirai Winery. Középhegy is a “cru” placed on the map by the Zsirai girls.
Zsirai Winery offers cosy rooms in a charming guests house, plus they have some rooms within the winery building as well!

Furmint in a nutshell

– Furmint is one of the few grapes allowed to use under the appellation of Tokaj, it is the main grape of aszú wines along with Hárslevelű.
– Tokaj winemakers answered with stunning dry Furmint wines to the decrease of sweet wine consumption.
– Furmint is grown all over Hungary, marvellous Furmint wines are made in Somló, Badacsony, Balatonfüred–Csopak, Mátra and Eger.
– It ripens late and has a nose of fresh fruits, often compared to ripe pear. Its significant acidity and alcohol produce characterful wines sometimes with a touch of tartness.
– Furmint originates from Tokaj, and there are several evidences to prove that, one of them is the mention of the variety as early as 1611 in a document from Erdőbénye, Tokaj region.

Béres Lőcse Furmint is available in magnum format!

“This wine was made from the selected harvest of Furmint vines from the Lőcse vineyard. The must, gently pressed with a maximum pressure of 1 bar, was settled for one night. The clarified must was fermented in new wooden barrels. After fermentation, it was aged for 6 months in barrels of various sizes (2 and 5 hectolitres) with different toasts. During aging, the wine developed its harmonious, rounded, mineral character due to constant lees stirring and micro-oxygenation processes. After the aging process, we crafted the final blend by skilfully marrying the best barrels.”

Zsirai Középhegy Furmint 2022, Tokaj

For us, the Középhegy is a symbol of freedom and experimentation — a terroir, where we were the first interpreters. Its wines are like a man in a sports jacket: playful, yet serious. In the nose, chamomile, green apple, pepper, and flavours of salty lemon.
Retail price on winery webshop: 18 EUR

Tokaj first and foremost

“Across Hungary corks are popping, but Tokaj’s sparkling wines are those that most appeal to me. They are the most consistent, but more significantly they have the strongest sense of place. Many places in the world make attractive bottle fermented wines, but Tokaji Pezsgő is driven by nervy Furmint which becomes savory and austere on volcanic soil. This winning combination produces wines with distinctive regional identity” – this is how Sarah Marsh MW ends her article. She introduces Sauska in detail, as the leading Tokaj sparkling producer, but mentions small batches as well: “Another small artisanal wine I enjoyed in Tokaj is the taut, steely, and linear Kata Zsirai Brut Nature NV.” Marsh also emphasises the uniqueness of Tokaj sparklings made of the other main grape, Hárslevelű. “You can taste the softer, honeyed style from Béres Winey, where they specialize in Hárslevelu. However, in the hands of sparkling master Zoltán Demeter, Hárslevelű is delicate and fragrant, breezy and saline.”

March describes Garamvári Vineyard in South Balaton in detail, and she was impressed by difference of the two Furmint sparkling wines of Garamvári (they have a small vineyard in Tokaj as well): “I was keen to compare the two bottle-fermented 2019 Furmints which were produced identically including the dosage. Lellei Furmint (from Balatonboglár) has a gentle palate with light herbal notes and a creamy finish. The Tokaji Furmint was more austere, energetic, straighter, and more focused.”

Barta – in the price of gold and worth it!

Barta Tokaji Aszú 6 puttonyos 2019 is undoubtedly the most expensive in this list with its price at 100 EUR for a bottle of only 0.375 L. A single vineyard Aszú from Öreg Király (‘Old King’), a cru of historic importance near the village of Mád.
“For this wine, botrytised, shrivelled Furmint berries were individually hand-picked and then macerated in fermenting Furmint base must for 18 hours before gentle pressing and fermentation in oak barrels. The fully fermented wine was cooled, racked, and then aged for 24 months in small Hungarian and French oak barrels.”

Béres – every single drop is medicine

The winery was founded by the son of the creator of the world famous Béres Drops – hence the slogan. The estate is located in the picturesque village of Erdőbénye, where the very first evidence of grape-growing of Tokaj was found.
On TasteHungary.eu Aszú-lovers can find a 2008 vintage Béres Tokaji Aszú, a true treasure!
Vintage 2008 had an early spring, and enough rain to produce a good amount of botrytis and lots of Aszú berries. Grapes were harvested up until November 26th. The gorgeous dark golden-amber color of this wine is a promising sign of what is to come inside the bottle. This wine was fermented in oak barrels and aged in Hungarian oak barrels for 24 months (with an additional 12 months in the bottle before it was released).“

Holdvölgy – the embodiment of Tokaj’s culture

This Tokaji Aszú is the odd one out – this is the only one with a name: Culture. Though Holdvölgy estate gives a name to each of the wines, the range consists of Intuition, Signature, Meditation and others. Holdvölgy is also unique to offer many vintages of the 6 puttonyos Tokaji Aszú on their webshop, 12 different vintages (!), to be precise. They make only 6 puttonyos Aszú wines and age them for 8 years! This is the reason for having released “only” 12 vintages. However, for keen Aszú lovers younger vintages are also available en primeur.
Holdvölgy Culture 2017 is made of Furmint, Hárslevelű and Zéta with a 100% Furmint base wine. “The nose is clean and precise, dominated by fresh cantaloupe and supported by apricot compote, candied lemon peel and a hint of clove.
Patricius – makes you beautiful

Let me share a personal memory: when I was pregnant with my third child, I happened to participate in a wine dinner in Tokaj with several producers. I refused to drink wine, but Péter Molnár, the estate manager of Patricius and his wife, Sarolta Bárdos (owner and winemaker of Tokaj Nobilis) insisted on having a tiny portion of Tokaji Aszú. “It is full of trace minerals, and, believe us, your baby will be more beautiful!” Certainly, they were joking with the second half of the sentence, but I looked around, at all the beautiful faces around me, and I was convinced. Needless to say, my daughter is a real beauty…

The wines of Sauska estate – weather they are red wines from Villány, sparkling wines disgorged in Budafok or Aszú wines from Tokaj are simply spotless. The One & Only wines are unique, outstanding ones with a serial number, so that they are collectibles. Zsirai Tokaji Aszú No1 2021 is one of the three One & Only wines, it is made of 100% Furmint from Középhegy and Nyulászó vineyards.
The hand picked grapes fermented spontaneously and then aged for 24 months in 4th use 220L barrels. This wine has the highest amount of residual sugar of all we listed with 288.5 g/L! But do not worry, the acidity of 9.14 g/L balances it brilliantly.

+1 Aszú Glass – to dress your Aszú properly

Riedel created a Furmint glass in 2017, God bless them, and more recently, in 2023 Halimba Crystal, a Hungarian company created a glass dedicated to Tokaji Aszú wines. “A new glass, designed and tested to show Tokaji Aszú at its best, has been ceremonially unveiled today in Andrássy Kúria Hotel’s conference room in Tarcal. The approximately ninety invitees to the special event, mostly local winemakers, were treated to two Aszú wines, served in this elegant, uniquely shaped glass, selected from five finalist designs at a tasting by multiple local growers and wine professionals in August earlier this year. The event was hosted by Tokaj expert and author of the award-winning Tokaj Guide Gergely Ripka who has been the originator of, and driving force behind, the project. The glass is now available for purchase from manufacturer Halimba Crystal and, while few will be able to clink this with an Aszú on 10th December, International Aszú Day, the new glass will certainly adorn many more tables this coming Christmas in Hungary, and then hopefully become an essential part of the glassware range for bars and restaurants the world over.”

Aszú Day – since 2017

The idea of the International Aszú Day came from Dániel Kézdy, an avid fan and great expert of Tokaj. Mr. Kézdy has published a book on the wine region in 2014 with the title Tokaj – People and Vineyards which is available both in Hungarian and English. He was also the initiator and organizer of Furmint Február an annual event since 2010, and Hárslevelűk Éjszakája since 2014. The two events are designed to highlight these important Hungarian varieties. It was also Mr. Kézdy who came up with the idea of the International Furmint Day to be celebrated on the 1st of February. „You might say I am biased but I am convinced that it would be a hell of a task to refute me, so I’m not afraid to declare that Tokaj Aszú is the greatest sweet wine in the world and it deserves to be put in the limelight worldwide”, says Mr. Kézdy.
He also led an online campaign on social media and maintained a website dedicated to Aszú Day, however the landing page does not funcion any more. Nevertheless, Aszú Day is alive and is on, as long as there are fans of this magic wine.

Tokaji Aszú in a nutshell

The Tokaj wine region is situated in North East Hungary at the foothills of the Zemplén Mountains, along the rivers Bodrog and Tisza. The world’s first delimited wine region since 1737, the regulations were designed to protect local values and they prohibited the import of grapes, must or wine to the region. The soil is of volcanic origin (andesite, liparite, quartz) and this is reflected in the wines which show a certain minerality and tightness. The climate is continental with long and dry autumns. One of the defining features of the wine region is the multitude of microclimates and soils in the various vineyards resulting in wines of great variety and distinct characters.

Thanks to the special microclimate of the wine region the onset of Botrytis cinerea or noble rot responsible for the shrivelling of berries is an almost certain occurrence each year though admittedly with varying degrees of intensity. In autumn the diurnal alternation of morning fog created by the rivers and dry sunny days is conducive to the production of aszú berries.

Botrytis punctures the grape skins thereby assisting the evaporation of liquid matter and by doing so increasing the concentration of sugar, acidity and flavour compounds. However this is not a uniform process so the shrivelled berries have to be picked one by one over a prolonged period. Needless to say this is an extremely labour-intensive process; even experienced pickers can gather only 6-7 kilograms a day and the same vine might have to be revisited 4-5 times in one harvest period.

Once the liquid matter has evaporated the aszú berries are macerated in the fermenting juice or base wine of the same vintage for 24-48 hours with regular stirring for proper extraction. Once the maceration is done the aszú paste is removed, pressed and the resulting must is fermented to arrive at Tokaj Aszú. Post-fermentation residual sugar content must reach at least 120 gramm/liter.

Properly stored Tokaj Aszús can be enjoyed for several decades. A properly stored 20 year old Aszú is still magnificent with slightly transformed flavours, added complexity; it’s easy to see why they are so higly regarded by connoisseurs. However tasting younger Aszús with their more springlike, fresher and brighter profile provides just as much pleasure.

Tamlyn Currin, the brilliant wine expert at JancisRobinson.com, took part in a cross-border tasting event of Furmint, Olaszrizling (Welschriesling) and Kékfrankos (Blaufränkisch) wines, held in the Slovenian village of Kog. Today, let us introduce one of the highest scored Furmint wines made by Zsirai Winery (out of 35 Furmint wines).

The event was organized by the Kog 25 Pannonia association, which consists of local winemakers and an Irish couple who are wine merchants and cultivate a small area of land in Slovenia. The blind tasting included a workshop dedicated to each variety.

How to dress (or undress) Furmint

According to Tamlyn Currin, Furmint truly comes into its own when fermented spontaneously and with only a little sulphur added. Late harvesting, ageing in large barrels, and skin contact also suit it well, just as unfiltered Furmints can also be beautiful. She emphasized the importance of bottle ageing for Furmints – the grapes for her two favourites were harvested in 2019.
The expert, who scored wines on a scale of 20, gave a maximum score of 17.50 to 10 wines, including two Hungarian single vineyard wines: Kikelet Lónyai Furmint 2021 and Zsirai Nyulászó Furmint 2021. The other 17.50 wines are from Austria, Germany, Slovenia, and there is one from the Slovakian part of Tokaj.

Zsirai Nyulászó Furmint 2021

Described by Tamlyn Currin:
“Floral on the nose. Definitely some sweetness – like a very sweet clementine. Deliciously sweet! Clementines. Passion fruit! Silk and tweed. Playful. Wonderful ripe citrus; mouth-watering and really, really long. Oranges on a finish that flares out, flushed with juice and fragrance.”
(The sweetness is explained by the 19 g/L residual sugar.)

“It is not a turn in our life, just a clearer step on our path”

Zsirai bottles have recently been redesigned, the labels got a fresher, purer look with more emphasis on the vineyards, and with capsules of different, bright colours. Also, there is a new logo in the middle of the labels with a woman taming a lion. The strong female lead is obvious: the Zsirai sisters, Petra and Kata run the winery with Máté, Petra’s husband, creating a true family team with a lot of love to share with their followers.

Furmint as refreshment

Mád, the gem of Tokaj, the tiny village with superstars like Szepsy, is often written without the accent – because there is a good portion of madness in the minds… Just look at this running contest: the program includes a party the night before, so that runners could start with a decent hangover. Then, during the contest, gourmet finger food and stunning Mád wines await participants at the “refreshing stations”, to make it hard for them to get to the goal. The second edition awaits participants!

How to get to Mád: By car it takes about 2.5 hours via M3 motorway. By train: take an InterCity train to Szerencs, change there, altogether it takes 3.5 hours.
Distances: 6.5 km and 12 km (mostly on forest soil, a little on asphalt or pebbles)
Tickets: A ticket costs 25 000 HUF /approximately 63–65 EUR and it contains the Pasta Party on Friday, the participation in the running contest including “refreshments”, entry to the Saturday evening music concert and afterparty. Plus: downloadable race certificate, finish time via email, personalized finish line video.
Fancy dress: The organizers encourage participants to wear creative costumes, since not only the fastest winners, but also the most creative costumes get prizes.
Refreshing point food providing restaurants: Anyukám Mondta (Encs), Horgonyzó (Tiszalök), Karám (Bodrogkeresztúr), Macok (Eger)

February is the month of Furmint variety, it is celebrated all over Hungary and in several other countries as well, for example in the United Kingdom. Wherever you live, enjoy a glass (or better a bottle) of the wine of this amazing, versatile grape variety.

The pronunciation of Furmint is “Foor-mint”.

Furmint originates from Tokaj, and there are several evidences to prove that, one of them is the mention of the variety as early as 1571 in the Hétszőlő vineyard and another in 1611 in a document from Erdőbénye, both in Tokaj region.

According to DNI analyses, Furmint is the offspring of Gouais Blanc grape variety, therefore it is the “half-brother” of many famous grapes like Chardonnay and Riesling.

DNI tests have also proved that Furmint is a parent of Hárslevelű, the other important grape of Tokaj.

Furmint is one of the few grapes allowed to use under the appellation of Tokaj, it is the main grape of Aszú wines along with Hárslevelű.

Though most Tokaji Aszú wines contain Furmint, the variety is far more than an ingredient of the noble sweet wine. You can find single vineyard dry Furmint wines, dry and sweet blends and also marvellous bottle fermented sparkling wines made of Furmint.

Though most wine experts associate Furmint with Tokaj, it is grown in many other wine regions giving stunning examples of the variety: Somló, Badacsony, Balatonfüred–Csopak, Mátra and Eger.

Furmint is the 3rd most planted white grape in Hungary.

Furmint is also grown in Croatia, it is known as Moslavac there, while in Slovenia it is called Šipon.

Furmint was taken as far as South Africa, and we have seen “Tokaji Aszú”-type of wine made of Furmint and Hárslevelű in South Africa.

Lőcse – a vineyard with a story to tell

“We remember looking around here and seeing Erdőbénye for the very first time… it was love at first sight. Produced since 2003, our Lőcse Furmint wines soon became the iconic dry white wines of our winery” as Béres family recalls the memories of the beginning. The current vintage is 2019, proving that there is no reason to hurry, this grape has a lot of ageing potential. “A complex, layered yet dynamic Furmint, marked by pronounced minerality and subtle barrel aging. Its aroma is dominated by quince, ripe apple, and pear, complemented by pronounced but well integrated barrel spices. A substantial, full-bodied, mature wine that lingers on the palate.”

13 February, Furmint February grand tasting in Budapest

The annual grand tasting takes place in the centre of Budapest at the river Danube in the House of Traditions. Around 60 wineries pour their Furmint wines, certainly mostly from Tokaj, like Holdvölgy, Patricius, Sauska or Zsirai, but participants can get first hand experience about our No7 statement above. Yes, Furmint has great potential in other wine regions, so taste Furmint from Tornai Winery (Somló), Kovács Nimród Winery (Eger) and also from Steigler Cellar (Sopron).
