Food pairing:  Due to the good acid structure, this wine pairs well with heartier, richer dishes with more complexity – and even more grease. As for poultry, goose is the ideal choice. Looking for a partner of citrusy, sweet and sour plates rich in ginger and lime? This wine is the ideal choice, as well as for spicy fish dishes and cold meat or even for sophisticated soups. As for vegetables, a cauliflower gratin with Indian spices can be a blockbuster choice. Characteristic goat cheese or camembert could pair well, too.
