VII. Septimus Riesling 2023

Description: A spontaneously fermented premium wine, made from late October harvest grapes with golden, slightly shrivelled berries. It underwent a slow barrel fermentation, followed by 12 months of lees ageing under the naturally stable cellar temperature. On the palate it shows restrained citrus notes, ripe apple and peach, elegant minerality, and a long, refined finish.

Food pairing: Pairs well with roasted poultry, pork dishes, creamy sauces, aged cheeses, and subtly spiced Asian cuisine.

Story: This wine is not produced every year, as it is harvested at the end of October and depends on whether the thin-skinned Riesling berries survive the usually rainy autumn period. It is a source of many sleepless nights for us. When we harvest this wine, we are usually the last producer in the entire wine region still picking Riesling grapes.
