Three delicious Hungarian spreads with wine

Kitchen Paprikash is a YouTube channel run by a Hungarian woman, Tünde, who had lived in New York and London for years with her family. „I realized that many people around me like Hungarian dishes, but the recipes are hard to find. I love cooking and I started to learn video-making – a process still going on – so I decided to launch my channel. We also love wines Hungarian wines, thus we are glad to contribute to hungarianwines.eu with our video.” The spreads in the video below are easy to make, but hard to work out the calories afterwards… However, in winter, when the weather is cold outside, our body needs more energy, therefore these fat rich spreads are justified. Watch the video, enjoy the spreads with a good slice of bread, and don’t forget to drink a glass of Hungarian wines with it! Our recommendations are below the video.

Pork cracklings spread with Babarczi Rhine Riesling

It might sound shocking at first, but yes, the noble grape variety works well with the greasy delicacy especially due to its high acidity and crispiness, which is welcome after a bite of countless calories… Babarczi is a family winery cultivating their vines in the cool climate Pannonhalma wine region, and make juicy, crispy white wines – recently the sortiment has been extended with two red wines. „Pannonhalma vineyards reserve a small, selected area for this grape originating from the Rhine region, now of international popularity. A wine of strong character, it naturally draws attention with its well balanced refreshing levels of acidity and fleshy palate.”

Bryndza cheese spread with Eszterbauer ’Sógor’ Kadarka

Bryndza is a fresh, soft cheese made of sheep’s milk with complex, unmistakable flavour. The added onion and paprika makes it even harder to pair with any wine, but a spicy, complex Kadarka is a good choice. Eszterbauer Winery in Szekszárd is the specialist of the grape variety, they make different wines of Kadarka grape. Sógor (meaning brother-in-law) is meant for every day with its primary aromas. „Light, spicy and its acidity is in perfect harmony with all the other ingredients. The nose is intensely spicy, deep and complex. On the palate the same spiciness takes the lead accompanied by beautiful, fresh, crispy red berries.”

Again an excessively fatty spread which needs minerality, acidity and complexity to cope with, and Borbély Family Winery from Badacsony wine region has all these requirements in their wines, especially in single vineyard (Bács hill) Olasz rizling. „Apart from the characteristics of the variety, ripened fruit and some subtle oaky tones in the background can be discovered both on the nose and the palate. The unique character of the terroir is also reflected in this complex wine.”
