Egri Bikavér and Tokaji at Fabel Miami

As New York based Citadella Imports announces, Fabel restaurant in Miami has included single vineyard Gál Tibor Pajados Egri Bikavér and Patricius Tokaji Aszú 6 puttonyos along with Patricius Furmint (dry) in their wine list.

The open attitude towards the wines of the world is typical of the owners of Fabel. As they say: “The concept is inspired by our travels around the world from the beaches of St. Tropez to the islands of the Iooaian seas.”While the plates reflect contemporary cuisine of Greece, Turkey, Israel and Lebanon, the wine selection has a broader scope thank to Christopher Miller Master Sommelier. Harvest in full ripeness, afterwards light crush, considerate processing. A long term, 20 days of maceration in 55 hl wooden vats. Pump-over twice a day. Natural yeast. Aged in 220l and 500l Hungarian oak barrels for 14 months. (20 % new oak). Unfined and unfiltered.The “Pajados” Bull’s Blood Grand Superior is a single vineyard Bikaver with lots of layers and complexity. Vine yields are restricted to 35-45 hl/ha. The Pajados vineyard is a thin long vineyard at the very top of a string of south facing hills. The vineyard itself is at a steep incline.
Varieties: 40% Kekfrankos, 20% Syrah, 15% Cabernet Franc, 10% Kadarka, 10% Merlot, 5% Pinot Noir
On the nose and palate: Concentrated aromas of cherry, blackcurrant, juicy plum, blackberries, nutmeg & cinnamon. Fine tannins and a lasting silky finish with dominant notes of sour cherry and forest fruits.

Patricius Dry Furmint 2020

Furmint is a white Hungarian grape variety that’s widely planted in Tokaj wine region, where it is the main grape in the well known dessert wines, but also produce a single-varietal dry wine. This wine boasts a distinctive fruity varietal character, complemented with a perfumed nose due to the Furmint grape.
Varieties: 100% Furmint
On the nose and palate: The varietals signature notes of quince, stone fruit, almonds, white flowers and a beautiful salinity at the finish.

The king of wines and the wine of kings! Pronounced aromas of botrytized berries followed by enormous, high structure and full body. This Tokaji Aszú is one of the most treasured bottles, representing what Hungary has been known for hundreds of years, in our portfolio.

On the nose and palate: Long, smooth, endless taste and exceptional deepness of peach, apricot and fig character.
