Terroir, vineyard: The grape for this wine was harvested on Sabar hill, from Sabar’s own vineyard, near the cellar. The 36-year-old plantation has a soil of loess and clay. “A small hill with great wines” – as the slogan of Sabar Wine House refers to its terroir.

Technology: Hand harvest on the 10th of September. Fermentation with selected yeast in used 500 L barrel, maturation for 5 months. Bottled on the 13th of March, 2025.

What does SABAR grape taste? The structure of the smallest witness mountain has evolved into a clay soil of historic value during the times, and it is almost identical with the cell structure of a wine lover thirsty for toasting with wine – at least we like believing so. We are like our land, absorbing the life-giving humidity and swallowing the golden rays of the sun with greed. Crispy green apple, herbs, apricot stone. After 9 years we have arrived again.
