Technology: The harvest took place on 31 August 2016, in Dobogó vineyard, in the village of Kisharsány. By this date the grapes were ripened enough for making sparkling wine: healthy berries with high acidity. We paid special attention to the length of macera- tion to make it the minimum, in order to obtain a sparkling wine with elegant, pale rosé colour. Pressing was slow and gentle, and only the most valuable portion of the first run juice was used. After 24 hours of sedimentation the fermentation of the must began, at an average of 16–18 Celsius. We took care of retaining the high but precious acids, therefore malolactic fermentation was not done. After more gentle processes of cleaning and clarification the wine started its second fermenta- tion in March 2017. Thus after disgorging, at the beginning of November 2018, the sparkling wine had been matured for more than 20 months on the lees, and was released on the market.

Description

Elegant, pale colour of peach with fine bubbles. Intense, complex nose with peach, orange and subtle yeast with some citrus notes. On the palate finely woven texture, firm structure, crystal clear flavours. Fresh, vibrant acidity makes the sparkling wine vivacious and refreshing, enhancing the fruity character. Ethereal, feather light with tiny, melting bubbles. Perfect harmony. Taste it slowly finding pleasure in every sip.
