Technology: Harvested grapes are immediately brought to the cellar where the clusters are carefully selected and destemmed, and macerated on the skin for 4 hours. After a soft press, the alcoholic fermentation takes place in stainless steel tanks at a temperature below 16 °C (61 °F) for 12-14 days. The wine is stored in stainless steel vats for a few months until bottling.
