Barta Tokaji Aszú 6 puttonyos 2019 is available in a small bottle (0.375 L), plus it is quite expensive (around 100 EUR), and yes, it is worth the price. A magnificent single vineyard noble sweet wine from a great vintage. Try it with blue cheese filled pear baked in butter!

Fruit of a legendary vineyard

“For this wine, botrytised, shrivelled Furmint berries were individually hand-picked and then macerated in fermenting Furmint base must for 18 hours before gentle pressing and fermentation in oak barrels. The fully fermented wine was cooled, racked, and then aged for 24 months in small Hungarian and French oak barrels.”
The grape was harvested in Öreg Király Vineyard (‘Old King’), a breath-taking, steep vineyard which has its own story, as Gergely Somogyi explained on JancisRobinson.com.
“The renewal was a huge undertaking with trees having had to be cut to reclaim the top part of the ‘dűlő’ from nature. Despite some five decades of neglect, the terrace walls were in surprisingly good condition. Apart from these terraces, Barta bought and replanted another close to six high-elevation hectares in the south-southeast of the hill and another three in the west to own almost 10 out of the 13.3 hectares currently in production in what is called the Öreg Király today.”

The so-called umami is often referred to as the 5th flavour, though in fact it is not a flavour, but a sensation, a flavour experience. Smart pairings of food and wine can trigger a pleasing yet often hard-to-put-into-words feeling. As Barta team suggests, try Tokaji Aszú with pear filled with blue cheese, walnut and a touch oh thyme, baked in butter. Aged cheese itself contain the component responsible for the umami feeling, and it is enhanced with the highly acidic and super sweet botrytised wine.
