Sometimes we are sick and tired with the cheesy Christmas cards. Especially when we are having hard times, and empty words do not help. Let us share some different “merry Christmas” messages.

2020 – yes, it has been a hard year. But thanks God, we always had some wine in our glass. And how about the winemakers? They are humans, just like you are. They have difficult days, they experience joy as well as sorrow, so do we, wine writers. So, what we ask you now, for a second, is that please, think of the person, the people behind the glass. Lives, stories. It’s Christmas. Changes are sometimes hard, but after a change there is always something new. Just a few examples here, but we could go on telling stories forever.

1. Gere Attila Winery – New vibration

The best change is when a new human being comes to life – and with Gere Attila Winery the year 2020 started with the arrival of the newest grandson, Ádám. It was before all the gloominess of the pandemic arrived. We all wish we could forget everything after the birth of this blessed child.

Kurt Taschner is keen about posting stunning photos day by day. Around Christmas he wanted to share a lovely photo with snow around – but we do not have any snow. We have unusual high temperature, so Kurt was left with no choice, but to share an earlier photo. Yes, he and we are all longing for some normal climate circumstances! Climate change is not the change we wish.

Krisztina Csetvei is amazing – as we have said hundred times, but we must keep repeating, because indeed she is. Csetvei Garden is the ultimate place for winelovers, whatever the circumstances are. Her little daughter, Panna is older now – the changes of our kids are always astonishing.

Have you heard of impressionism? Cubism? Dadaism? Forget all. Sabarism is the new trend:) “More and more people like spending time here with a growing family and a growing circle of friends, and sometimes you celebrate important anniversaries with us. When you are here, it is like spending college years together. The most essential thing is being together, laugh and share experiences, just like back in school. This is what sabarism means to us. Relaxed and cheerful moments, days, tearful laughs, emotions, tranquility.” Sabar Wine House, this small estate on the small hill makes great wine, and also made a great change: it created a whole new word for those who experience sabarism.

Katalin Tóth, manager and co-owner of Tóth Ferenc Winery was surprised to taste the typical notes of Leányka grape variety (’Leányka’ means ’Little girl’) in a 50-year-old bottle! Leányka is a white grape, delicate and slightly aromatic, usually freshly consumed wines are made of it. Tóth Ferenc Winery managed to create complex, layered, exciting Leányka (Leányka Superior 2016, Mundus Vini, gold medal), but most cellars use Leányka for their Egri Csillag white blend. „We have opened a bottle of 1969 and 1976 vintage Egri Leányka, and we were surprised to realize that these were sweet wines. But the most astonishing was that the same notes of a young Leányka were discovered in these old wines. Late harvest character, honey, raisin, mango – both wines are enjoyable and real rarities. The tasting of these wines initiated a thought that Leányka may have much longer ageing potential in our cellars than we had expected” – says Katalin Tóth. The 1969 wine is an ideal Christmas present, especially for youngish, 50 year old ladies… 1969 vintage costs 35.000 HUF (106 euros) and 1976 vintage costs 30.000 HUF (91 euros), plus shipment. Tóth Ferenc Winery webshop is worth taking a look at, especially now, before Christmas. Special offers, wine pairings with outstanding quality artisan chocolate, limited edition wines and many wines in the new Eger community bottle.

Before Christmas wine magazines are full of ’what to buy’, ’how the find the perfect gift’ articles, but Bortársaság wine store concentrated on a more adorable topic: family. A recently posted article interviews winemakers with their son or daughter about their very first wine. Touchy, lovely, must read! Bortársaság is probably the most important Hungarian wine store chain with 20 stores nationwide and webshop, plus – what is more important – with a selection of wines with personality. Bortársaság, the word is a translation of British Wine Society, which was an example for the Hungarian founders. And this wine store is one of the few with a regular, functioning wine magazine, and the articles are even available in English! „It’s not a rare occurrence that during our winery visits to see sparkling-eyed young people plodding away next to the winemaker, initially observing from a distance, and with time taking part in the conversations more and more actively. Many of them grew up in front of our eyes and have become important figures in winemaking” – as we can read at the beginning of the article with the title ’The apple doesn’t fall far from the tree’. Several winemakers are asked, for example Attila and Andrea Gere from Villány (on the left) or Tamás and Bence Dúzsi from Szekszárd (on the right).
Read the whole article with fathers and children

Balaton, the biggest lake of Europe is known as a summer destination, however The Circle of Balaton fight against this perspective and work for having a ’whole year season around the lake’. This year a skate rink has been opened in BL Yacht Club, and with a symbolic ’Christmas tree’ of wine bottles, the winter season was opened at the beginning of December. The wines in the ’tree’ are the new vintages of the so called Wine of Balaton (’Balaton Bor’), fresh, easy drinking wines made of the most typical grape of Balaton: Olaszrizling.

The Circle of Balaton has not only organized a fancy festivity, but has initiated serious changes of attitudes towards the lake. As Gábor Kardos, spokesman of Circle of Balaton pointed out, Balaton is a unique system of living creatures. Unlike concrete, man made beaches, it is a natural resourse that should be protected. Sustainable development is the main goal, but it cannot be carried on if we ’use the lake’ for our own purposes. The Circle initiated to change the legal status of Balaton to name it a legal entity so that Balaton would have the same rights as that of a human being. The Circle has handed the petition to the Hungarian Government, the Constitutional Court and the President of the Parliament.

Circle of Balaton: The founders and members believe that Lake Balaton is not five wine regions, but one great wine area which should act likewise. The members’ aim is to change the attitude towards the lake: visitors should be attracted all year, not only in summer. They managed to create a common brand in 2016: ’Balaton Bor’ (Balaton Wine) is a fresh, easy drinking wine made of the most typical grape of the lake, Olaszrizling (aka Welschriesling).

As Christmas is coming, we like cooking traditional Christmas dishes including sweets. If you want to try something new, why not look at traditional Christmas dishes of other countries? In Hungary almost every family makes or buys beigli, this sweet pastry orginally coming from Silezia (now Poland) and arrived to Hungary in the 19th century with the Austrians, when Hungarians started to celebrate Christmas according to German-Austrian traditions. The traditional filling is made of poppy seed or walnut.
One of the best recipe belongs to the world famous confectionary called Gerbeaud. You can buy the beigli in the historic Gerbeaud house in Budapest, but there are Gerbeaud cafés in Tokyo and Seoul as well.

In Hungary, Gerbeaud pastries are available in a lovely Buda villa called Émile as well. Buda’s new culinary centre, Émile, opened its doors in April 2015. Émile offers its customers the quality of Gerbeaud and Onyx; it is located in a recently renovated 1920s villa and in the villa’s beautiful gardens. Émile, where guests can enjoy a gastronomic experience the likes of which is still relatively unknown in Hungary. Whether for breakfast, lunch, or a family dinner; a business meeting, a light afternoon snack, or pastries to take away, Émile is the solution for Buda.

Émile has a unique wine list concentrating on wines from craft wineries like Gallay Winery from Bükk wine region with very small production. In Émile you can enjoy a nice slice of walnut filled beigli with a glass of Kreinbacher Prestige Brut méthode traditionelle sparkling wine from Somló – the nice yeasty notes go brilliantly with the walnut filling or escort your beigli with a lovely Barta Sweet Szamorodni – the walnut notes are present in the wine as well. With poppy seed filling we suggest a red wine, the super elegant Etyeki Kúria Pinot Noir is a good choice, or Solus Merlot from Attila Gere is also an unforgettable pair.

Poppy history

Poppy seed was so crucial in Hungary, that before joining the European Union, there was a strong campaign to protect our rights to use poppy seed in excessed amount. In fact we really have a lot of dishes with poppy seed: ’guba’ is made of milk soaked crescent sprinkled with a lot of poppy seeds, and we eat simple pasta, like tagliatelli with poppy seed. Cakes are filled with luscious poppy seed filling. Hungary managed to keep the right to sell poppy seed in supermarkets, and thus our joining the EU was celebrated with a national ’guba feast’ in Heroes’ Sqaure, Budapest in 2004.

Does a cake with poppy seed count as an opiate? Well, yes. Discovery Channel‘s MythBusters series episode ‘Poppy Seed Drug Test’ demonstrated that eating both poppy seed bread and poppy seed bagels resulted in both of the hosts testing positive for opiate use, 30 minutes later. But the level of opiates is very low in the seed (it comes from the milk of the pod and straw of the plant). What will happen to you if you eat a lot? You will sleep well, plus benefit from the nutritious, healthy poppy seed.

Here is a simple recipe to make beigli

Some more tips on wines go with walnut filled beigli

Dessert wines with dried fruit and walnut flavours and aromas are the obvious choices, but why not try a complex dry white as well? Beigli’s pastry is not as sweet, so an aged, exciting dry white can make a balanced company for our beigli.
